This delicious cheese has a potent flavour and aroma, a perfect balance between the rich sheep milk taste and the deep rosemary notes. It has firm yet light texture that make of each bite a true delight.
The cheese is made with pasteurized milk from Merina sheeps, that pasture in the Dehesa landscape of Southern Extremadura. It is cured for between 9 and 10 months, and its natural crust is smeared with extra virgin olive oil, Iberic pig lard and rosemary leaves.
Made by El Prado de Llera, one of Badajoz' province best artisanal cheesemakers.
