Salchichón is one of the tastiest and best known Spanish products. It has a rich and potent bouquet, that reminds of smoked meat, very subtle caramel, nuts and bacon notes, as well as a powerfull peppery note, that comes from the black pepper kernels that are part of this culinary wonder.
Made with the finest meat from Iberian pigs, fed on the best acorns during the Montanera phase, and raised free in Jamones Majín pastures, a quiet place where they can roam and exercise, which makes the meat tastier. Its elaboration follows a traditional process from the Guijuelo area, where the hot summers help the Iberian pig fat infiltrate its muscle mass, thus achieving an oily texture full of flavor.
